Coconut is ubiquitous in southern Indian dishes. Learn how this ingredient is incorporated into a dish from the verdant southern Indian state of Kerala in this hands-on cooking class with Chef Kavitha.

Begin by mixing up a batch of appam, a type of pancake that is made with fermented rice batter and coconut. Then, prepare a vegetable stew with a coconut milk base accompanied by plenty of warm spices. To complete your meal, luxuriate in a true South Indian specialty: chicory coffee with milk and sugar.

We had a fantastic time with this experience. Chef Kavitha was able to accommodate us in our tiny Brooklyn kitchen and came with all the supplies she needed. She was incredibly knowledgeable about the cuisine and was able to answer a lot of questions, and we learned a ton. The food was also delicious and it was fun to try to cook our own dosas.

Chef Kavitha was absolutely wonderful. The food was delicious, and the teaching very thorough. Breaking down the spices the way she did means we'll be able to try these dishes ourselves the in future. But most of all, she was just such a lovely person. It was a real joy to have her visit our home for a bit. Highly recommend!
