There's no way you can enjoy Cajun food when following a low-carb diet, right? Wrong! These rich and tasty dishes are low-carb and absolutely delicious. The flavors of New Orleans are not outside your grasp with Chef Jessica as your guide.
Start with creamy loaded cauliflower soup made with cream, cheese and bacon. You won't even miss the potatoes! Next, whip up then dig into a smoked eggplant dip with garlic, lemon juice and olive oil, followed by a crunchy pistachio-crusted salmon entrée. End with a flourish with decadent chocolate mousse.
Guests are welcome to bring wine and beer to enjoy during the class.

Chef Jessica's professional culinary career involves a variety of roles, including experienced line cook, sous chef, lead cake decorator, bakery owner and even preparing meals for movie sets. One of her culinary passions revolves around cheese and making her own hand-crafted vegan version. Chef Jessica continues to push her culinary boundaries and is currently studying nutrition to be able to offer even more healthy options in her cuisine.
