"Elegant" eclairs did not describe the appearance of my first attempt (check out picture), but can I make them more elegant next time? YES! Stacey was absolutely wonderful. I learned a lot, and what I learned can apply to other kitchen adventures as well.

We made pastry cream and Japanese pancakes. I learned how to keep condensation from forming on the pastry cream. Stacey was very encouraging.
