Light, but full of earthy ingredients—such as salmon, olives, and capers—the appetizers make way for a braised chicken that will demonstrate an easy winter cooking technique while uniting Mediterranean flavors. The traditional tian featuring zucchini, potatoes, and tomatoes will be topped with a warm melting sauce. A classic French dessert will use light fruits for a bright and brilliant end to this meal.
