Begin with classic chips and salsa from scratch, including roasted pepper salsa with a kick and crunchy, salty corn chips. Next, smothered chicken enchiladas with an avocado crema sauce and fresh cilantro. No Mexican meal would be complete without refried black beans and a tangy Mexican slaw. Cool the heat with a creamy vanilla and caramel flan for dessert.
