Cooking Class - Vegan Indian Spread

Create a restaurant-quality Indian feast, using vegan ingredients, with Chef Parsati.

In this Indian cooking class, you'll prepare a spread of vegan Indian dishes worthy of a spot on the menu on the best Indian food restaurant in town. You'll learn which ingredients to use, and smart techniques to properly prepare them.

First, Chef Parsati will guide you through making tofu tandoori seasoned with aromatic spices and topped with picked onions. You'll also cook cholae masala with chickpeas and peas pulao, a rice dish. Finally, end the class with a sweet cranberry halwa, a traditional Indian dessert made with semolina.

Guests are welcome to bring wine and beer to enjoy during the class.

My wife and I really enjoyed this class! It took place in Chef Parsati’s studio, an apartment that I think she mostly uses for these classes. It was comfy and of course had a beautiful kitchen. There was one other man there attending the class in the same time slot, and we all were given a chance to participate in the cooking. Chef Parsati is friendly, a lot of fun, and is clearly a well-rounded and knowledgeable chef. We learned about the origins of the dishes, and of course she showed us how to prepare them. Beyond that, though, this was really a “cooking class.” She actually taught us about why certain ingredients go together, what substitutions can be made for dietary restrictions or simply for a different flavor variation, and also what ingredients or flavors not to try in the dish because they wouldn’t go well (and why). She taught us how to make the dishes richer or lighter. Cooking classes are often just about following instructions and then eating. Chef Parsati gave us information we could use for lots of different dishes with an Indian flavor profile. I’m sure her classes from other cuisines would provide a similarly broad understanding of how to recreate the flavor profile of that cuisine. She taught us how much heat to apply at various stages for each dish (to achieve the proper char, without burning, for example). She really explained why we were doing what we were doing at each step, which makes me more confident we’ll be able to recreate it. Last but not least, the food was great!!

As before (this is our second class), chef Parasti did not disappoint! New dishes, new tricks, and again a very tastly meal. Again perfectly organized. She is an excellent chef and teacher - we highly recommend. Hoping to be back for more classes soon.

What a delight to meet Chef Parsati and learn the wisdom and magic of cooking vegan Indian complete meal with her. We were 2 couples, celebrating our husband's birth days- rather then adding more gadgets, we added a beautiful and heart warming memory and learned new skills in the process. The space was well set for hosting at least few more people if needed. The ingredients all organic, fresh when possible. We learned the different variations of the dishes (great home work for future home meals to come). Chef Parsati shared bit of history about some of the dishes, the regions in India they come from, what influences a dish and ways to substitute ingredients based on dietary preferences, why it is better to use certain oils for cooking and much more. I loved to learn the science and reasoning as well as experience the many unique flavors of the Indian kitchen. This evening was truly a combination of culinary art, science, passion for sharing the love of cooking, super tasty and healthy meal as well as great memorable experience with our friends. My friends are already gathering the next dishes they wish to learn.. we will sure be back. Thanks you very much for a wonderful evening.
