In this hands-on class, you will explore the diversity and complexity of tamales, a popular dish in both Mexico and Peru. You will learn how to assemble four types of steamed corn tamales with the assistance of Chef AJ.
To start, you will prepare small tamales filled with corn and salsa verde. Then, make two larger savory tamales — the first filled with cheese and red peppers, and the second filled with pork and cactus. End with a sweet and savory tamale cake made with guava paste and melted cheese.
Guests are welcome to bring wine and beer to enjoy during the class, or alcohol can be purchased on site.
