The essence of soul food is taking something that was cast off and making it glorious. Chef Joy delivers all of the flavor of soul food while cutting out the fat. Begin with maple syrup cornbread baked with spicy black-eyed peas, then move on to a succulent roasted chicken with buttermilk gravy. The finale of the evening is a spiced rum pound cake that would be the talk of any down home supper.
