Join Chef Eric as he guides you through the great flavors and ingredients of Louisiana.
In this hands-on class with Chef Eric, you'll learn how to prepare a four-course New Orleans menu. Chef Eric will also teach on the difference between Cajun and Creole cuisines along with the secrets to making a great roux.
All of the dishes you will learn in this class are built on a homey yet refined rusticity, including a succulent chicken and andouille sausage gumbo founded on a dark roux that gives it backbone, while a well-balanced cocktail of Cajun spices leave your taste buds singing a jazzy little tune.
Guests are welcome to bring wine and beer to enjoy during the class.

I had the pleasure of attending Chef Eric's cooking class, performed in the very large and bright Cornucopia kitchen and presentation facility. Chef Eric is very professional and knowledgable, but also down to earth and fun to talk to. His Cajun Catfish Tenders with Spicy Remoulade was very tasty, and the Thai Shrimp Curry had a wonderful balance of interesting flavors (coconut milk and chili paste!) and was very tasty, light and smooth. The Chicken and Andouille Sausage Gumbo was a hearty dish with a little kick, but not overpowering. Great comfort food. All in all, everything was quite good, it is a very nice facility for groups both large and small, and Chef Eric made it a relaxing and fun experience. Highly recommend.

Growing up, Chef Eric’s mother taught him the magic of pairing a variety of ingredients to create marvelous dishes. Before she passed away, Chef Eric promised his mother that he would take his passion for food and make it his career of choice. A 2004 graduate of Loretta Paganini’s International Culinary Arts and Sciences Institute, Chef Eric is now a lauded culinary instructor, caterer, private chef, and business owner.
