Tex Mex Lasagna

Ingredients

  • 1 Package of flour or corn tortillas (any size)
  • 3 Tablespoon(s) Olive oil
  • 1 Pound(s) Ground beef or turkey
  • 3 Garlic cloves, minced
  • 1/4 Cup(s) Onion, diced
  • 1 Can black beans
  • 1 Can corn
  • 1 Can diced tomatoes
  • 1 Cup(s) Salsa
  • 2 Cup(s) Cheddar cheese, shredded
  • 3 Tablespoon(s) Taco seasoning
  • Salt and pepper, to taste

Directions

  1. In a large skillet, brown beef and onion until meat is no longer pink. Stir in the black beans, corn, tomatoes and taco seasoning; bring to a boil. Reduce heat; simmer, uncovered, for 20 minutes.
  2. Spread one-third of the meat sauce in a greased 13-in. x 9-in. baking dish. Top with the tortillas and cheese. Repeat layers, ending with meat sauce. Sprinkle with cheddar cheese.
  3. Bake at 350° F for 20 minutes or until cheese is melted.
