Prep Work Details

Before the class, please purchase sashimi-grade salmon. If you do not have sashimi-grade, freeze regular salmon in a deep freezer 48 hours prior and thaw it on the morning of the class. Sushi rice preparation takes about 30 minutes. Please presoak the rice before class and prepare your house mayonnaise, spicy mayonnaise and sushi vinegar (seasoned rice vinegar) in advance. Start cooking the sushi rice about 40 minutes before the class using either a rice cooker or instant rice method so it’s ready to be seasoned together when you begin. For sesame seeds, just use regular store-bought sesame seeds and also have a butane torch ready if you can, as you'll be using it during the session.
