For Salmon:

  • Salmon fillets
  • Balsamic vinegar
  • Smoked paprika
  • Fresh oregano (or dried oregano)
  • Shallot
  • Garlic
  • Red pepper flakes
  • Kosher salt and black pepper
  • Extra-virgin olive oil
  • Lemons
  • Feta cheese
  • Fresh basil, dill and/or mint

For Orzo Summer Salad:

  • Cooked orzo
  • Extra-virgin olive oil
  • Fresh basil, dill and/or chives
  • Roasted red pepper
  • Chickpeas
  • Cherry tomatoes
  • Green olives
  • Cucumber
  • Avocado

For Portokalopita (Greek Orange Cake):

  • Caster sugar (superfine sugar)
  • Navel oranges (juice and zest)
  • Filo (phyllo) pastry
  • Medium eggs
  • Greek yogurt (full fat, strained)
  • Extra-virgin olive oil
  • Baking powder
  • Vanilla extract or paste

For the Syrup:

  • Water
  • Caster or superfine sugar
  • Orange juice
  • Orange zest

For Red Orange Blossom Cocktail:

  • Vodka
  • Ouzo
  • Orange juice
  • Club soda
  • Grenadine syrup
  • Optional: Fresh mint sprig

Prep Work Details

For Salmon: Prepare marinade by combining balsamic vinegar, smoked paprika, fresh oregano, chopped shallots, minced garlic and extra-virgin olive oil in a bowl. Add salmon fillets and let marinate while you prepare the salad. For Orzo Summer Salad: Cook orzo according to package directions until just tender. Drain well. Chop roasted red peppers, halve cherry tomatoes, slice cucumber and dice avocado. Drain and rinse chickpeas. Chop fresh herbs (basil, dill and/or chives). For Charred Lemon Feta: Slice lemons and remove seeds. Crumble feta cheese. Chop fresh herbs (basil, dill and/or mint). For Portokalopita (Greek Orange Cake): Preheat oven to 350°F (175°C). Grease and line cake pan with parchment paper. Zest and juice oranges. Tear or shred phyllo pastry into small pieces and let dry out slightly. Measure out all ingredients prior to class. For Red Orange Blossom Cocktail: Chill glasses. Prepare mint sprigs if using. Have all ingredients measured and ready.
