Japanese short or medium grain rice

Prep Work Details

Make Sushi Rice. Cook rice using a rice cooker or stovetop. Allow rice to cool to room temperature before assembling rolls. Prepare Bamboo Mat. Wrap bamboo mat tightly with plastic wrap. Prep Nori. Use whole sheets of nori for large sushi rolls, or break sheets in half for smaller rolls. To break: stack two or three sheets together, fold in half (short ends together), press to crease, then gently pull apart. **Make Spicy Tuna Filling.** Chop tuna into small pieces and add to a bowl. Add sesame oil, mayo and sriracha. Mix to combine.
