We enjoyed cooking a Seafood Paella. Great knowledge and suggestions for substitutions of needed or desired items. We were also impressed that she knew about the history of the dish. Website was not as user friendly but have absolutely no complaints about Chef.

You’ll learn to prepare ingredients like clams, prawns, mussels and saffron, cooking them up in a traditional paella pan and achieving the crispy, flavor-packed rice crust known as a socarrat. Ingredients
For the Sofrito
• 3 tbsp olive oil
• 1 large onion, chopped
• 1 red bell pepper, chopped
• 4 cloves garlic, minced
• 1 cup diced tomatoes (fresh or canned)
• 1 tsp smoked paprika
• ½ tsp saffron threads
For the Paella
• 1½ cups paella or medium-grain rice (Bomba or Arborio)
• 4 cups seafood or chicken stock
• 1 cup dry white wine
• 8 littleneck clams, scrubbed
• 8 mussels, scrubbed and de-bearded
• 12 large prawns (shrimp), peeled and deveined
• 1 cup frozen peas
• Salt and pepper to taste
For Serving
• ½ cup fresh parsley, chopped
• Lemon wedges
For the Sangria (optional pairing)
• 1 bottle Pinot Grigio
• 2 lemons
• 1 large orange
• ½ cup simple syrup
• Ice cubes
