Online Cooking Class - Handcrafted Sushi

Learn how to make a variety of sushi favorites with Chef Vivian and Michi.

Join Chef Vivian and Michi as they guide you in this interactive, live virtual cooking class, and teach you every integral step to making picture-perfect Japanese cuisine. Learn how to make three different varieties filled with assorted vegetables, spicy tuna and a combination of crab, tuna and salmon. To accompany your rolls, you'll also make a crabstick and avocado salad with a sake and miso dressing.

Kit Description

Sushi Kit
Kit includes: Sushi rice, nori, rice vinegar powder, sesame seeds, wasabi powder, rolling mat, cooking instructions, shopping guide, and drink pairing suggestions. Servings: Makes 8 rolls with 6 pieces each. Please discuss with the class host the exact ingredient needs if purchasing the optional kit.

Japanese short grain sushi rice
Imitation crab
4 oz raw tuna (red in color)
4 oz raw salmon
1 avocado
1 English cucumber
1 small carrot
2 cups shiitake mushrooms
1 small pack of miso paste (red or white)
Japanese kimchee base or spicy sauce of your choice
Small bottle of sake
Soy sauce
Rice vinegar
Sesame seeds
Wasabi paste or powder (optional)
Pickled ginger (optional)

Bamboo sushi mat
Sharp knives
Two cutting boards
Clear wrap
Hand roll stand, optional
Measuring spoons

Prep Work Details

Please gather all ingredients and equipment prior to class. Remember to use two separate cutting boards, one for the fish and the other for the vegetables. If you purchased a sushi kit, please follow the sushi rice recipe in the class packet and not the directions that came with the kit. Thaw your sushi-grade fish 2 to 3 hours before the class Half-moon cut half of the English cucumber and julienne the other half Mushrooms and carrot should be julienned Sharpen your knives In class, we will be making the salad and miso dressing, a vegetable temaki (hand roll), a hosomaki (spicy tuna roll with seaweed on the outside) and an Uramaki (rainbow roll).
