You’ll start by mixing just flour, water and olive oil, then shaping the dough into thick pici: a rustic Tuscan pasta similar to hand-rolled spaghetti. The process is simple, calming and surprisingly satisfying once you find your rhythm. When your pasta is ready, you’ll make a vibrant pesto using fresh basil, almonds and Parmigiano Reggiano.
