Learn how to select, cook and elevate seafood for a Mediterranean-style meal with Chef Chad.
In this hands-on cooking class, the chef will teach you how to make vibrant dishes from start to finish, including tips for choosing and preparing your seafood. Practice cleaning whole octopus and utilizing seasonal ingredients to create a Mediterranean-inspired menu.
Begin with a kale salad with marinated feta and tangy lemon-dijon aioli before Chef Chad demonstrates how to make pan-seared branzino with a gourmet twist. Prepare octopus escabeche with rich confit tomatoes and crispy chickpeas, and make an olive oil cake with candied orange peels for dessert.
Guests are welcome to provide wine and beer to enjoy during the class.

Meet your chef
Chef Chad got an early start in the kitchen, learning how to cook at the tender age of eight. After his interests shifted to sports, he became aware of the connection between nutrition and health. This awakening drove him to travel the West Coast and Southwest for pastry and private chef opportunities. Now settled in Southern California, Chef Chad shares his love of food with hungry clients and eager students.
