Cooking Class - Cooking With Italian Nuts

This beautiful Italian meal showcases two types of nuts grown in Italy.

Some of the best pistachios in the world are grown in the volcanic soil of Sicily near the village of Bronte. Italian stone pines produce the pinoli, or pine nuts, used in traditional pesto and other dishes. This class with Chef Caroline celebrates the use of nuts in Italian cooking.

Begin with an antipasti that includes mozzarella, then move on to the second course — corzetti pasta and pesto with basil and pine nuts. Learn how to perfectly cook pistachio-crusted salmon for your entrée, then finish the meal with rose lemon cream and candied pistachios.

Guests are welcome to bring wine and beer to enjoy during the class.

Chef Caroline is delightful. Her stories about learning to make pasta in Italy are enjoyable. Pasta making is definitely a passion of hers and her excitement is contagious. All of the dishes she prepared were outstanding, much what I'd expect from a fine restaurant.
