In this class, Chef Rishika features recipes that pair seemingly disparate flavor profiles and textures to create emblematic classics of northern Indian cuisine.
Learn how to properly prepare chola tikki chaat, a savory potato paddy served with chickpea stew, onions, cilantro and two chutneys made of date and tamarind and yogurt and mint. Then, you'll cook up a dish of kadai chicken served with vegetable pulao — a side dish of fluffy rice with potatoes, carrots, peas and spices. Your meal ends with rice sevai pudding, a slow-cooked rice pudding dessert that is both simple and nuanced.
