Under the expert guidance of Chef Luis, you’ll learn how to prepare a variety of tortillas complete with fresh fillings and toppings.

Begin by preparing tortillas from scratch using corn and limestone. Practice slicing and dicing ingredients to make salsa verde, salsa roja and salsa de fruta. Work with local ingredients such as cilantro, corn, squash, seasonal fruits, dry chilis and Oaxacan hot chocolate.
