My compass points toward the steam dancing above a pot, toward the crust that sings when the knife passes through it, toward the warm perfume of newly born bread. Sometimes I sit at an imaginary table with Ferran Adrià and Massimo Bottura, not to copy their dishes, but to ask whether creativity is also seasoned with doubt. They answer without words: a foam that vanishes, a cheese that smells like childhood. Then I understand that eating is a philosophical act. Every bite is a question about who I am and where I come from. I love simplicity that demands attention. A tomato with salt can be a treatise on summer. A dark coffee can contain the entire night, with its thoughts floating like tiny constellations. I do not seek luxury, I seek truth. And truth in gastronomy has texture, temperature, silence. I have learned that taste is not only on the tongue, but in memory. To cook is to think with the hands. To eat is to accept that the world enters us and transforms us.
