Recreate the bold, creative world of modern Indian fusion cooking in this hands-on cooking class with Chef Bal. Drawing on traditional Indian flavors and contemporary technique, this session introduces three dishes that are as striking to look at as they are to eat.

 

You'll begin by marinating and assembling a tandoori pear salad with avocado, arugula and cumin yogurt dressing – learning how tandoori spice transforms an unexpected ingredient. Next, you'll build a Konkani prawn curry from scratch, simmering prawns in a chili coriander coconut sauce with kokum petals for a coastal Indian depth of flavor.
