What You’ll Do

Learn key Mexican cooking techniques like toasting, frying and building layered flavors from scratch.

In this hands-on cooking class, you’ll learn foundational techniques behind some of Mexico’s most popular dishes. Start by making elote, learning how to grill corn and season it with bold flavors like tajin and cilantro. Then, prepare chicken tinga tostadas from scratch, cook and shred chicken thighs, build a chipotle adobo sauce and assemble crispy tostadas with refried beans and queso Oaxaca. Next, make a fresh guacamole with pomegranate and homemade tortilla chips, focusing on knife skills and balance of acidity. For dessert, fry your own churros and make a simple dulce de leche for dipping. A great intro to practical, everyday Mexican cooking!

Guests are welcome to bring wine and beer to enjoy during the class.

We joined Chef Mat for an evening of Mexican cooking and had a great time! The tasks were split evenly among all the participants (our group of 4, and another solo attendee) and Mat was great at floating between all the tasks, guiding, supporting, and teaching. His expertise shined throughout the night and we had a spectacular meal with it! Overall, a great night with great food and laughs.

Cooked Mexican food and learned everything from how to identify flavour profiles for a good sauce to good knife holding technique (you think you've been doing it right your whole life but you're probably not). Chef Mathieu is chill, easy to talk to, and his home is spatious! Lots of room for everyone to do their tasks. Then you all sit down together and eat what you made. Overall a great experience, I would recommend it.

I went to this class solo as a present for Christmas. Chef Mathieu was very knowledgeable on cooking and cooking skills. Taught us basic kitchen skills and more. He was very engaging and funny which made it more welcoming. I would definitely do another one of his classes
