What You'll Do

Learn key Mexican cooking techniques like toasting, frying and building layered flavors from scratch.

In this hands-on cooking class, you’ll learn foundational techniques behind some of Mexico’s most popular dishes. Start by making elote, learning how to grill corn and season it with bold flavors like tajin and cilantro. Then, prepare chicken tinga tostadas from scratch, cook and shred chicken thighs, build a chipotle adobo sauce and assemble crispy tostadas with refried beans and queso Oaxaca. Next, make a fresh guacamole with pomegranate and homemade tortilla chips, focusing on knife skills and balance of acidity. For dessert, fry your own churros and make a simple dulce de leche for dipping. A great intro to practical, everyday Mexican cooking!

Guests are welcome to bring wine and beer to enjoy during the class.

We had a fantastic evening with Chef Mathieu. He is an excellent educator, a lot of fun, he provided information and opportunities to create something new. We gave him a few challenges with having a big age range from 12 - 60 and then added a Vegan and a gluten free client, he was able to manage all of it extremely well. There was a lot of food, fun and we all learned new things about spices and techniques for cooking. Thanks so much for a fabulous evening Mathieu. Highly recommend!

We joined Chef Mat for an evening of Mexican cooking and had a great time! The tasks were split evenly among all the participants (our group of 4, and another solo attendee) and Mat was great at floating between all the tasks, guiding, supporting, and teaching. His expertise shined throughout the night and we had a spectacular meal with it! Overall, a great night with great food and laughs.

Chef Mathieu was very friendly, very knowledgeable and fun. He included everyone in the cooking and was great at assigning jobs. The food was very tasty and would definitely recommend his classes.
