Make Cappelletti di Spoja Lorda from scratch while enjoying wine and panoramic views of Bologna.

In this cooking class, you’ll discover the flavors of Bologna while taking in panoramic city views from the cozy setting of a local home. Your culinary experience begins with a welcome aperitif as Chef Olga introduces you to the traditions of Emilia-Romagna and one of the region’s authentic specialties, Cappelletti di Spoja Lorda.

 

Then, you’ll learn to make fresh pasta from scratch using time-honored Italian techniques. Roll the dough by hand and prepare the famous “Spoja Lorda,” a traditional pasta sheet lightly spread with a soft cheese filling before being cut and folded into delicate cappelletti. You’ll master each step of the process while discovering the history and techniques behind this beloved regional dish.

 

Once your cappelletti are ready, sit down to enjoy your handmade pasta paired with local wine and coffee, along with good conversation and the warm atmosphere of a true Italian home.

Born and raised in London and based in Bologna for more than 40 years, she has studied traditional cuisine at some of the city's most respected cooking schools. Since childhood, Chef Olga has been devoted to the art of fresh pasta, preparing every dough by hand using the traditional mattarello technique and recipes passed down through generations. Known for her warm hospitality, she loves sharing the flavors, culture and convivial spirit of Bologna with guests from around the world.
