In this interactive cooking class, Chef Erika showcases regional produce and classic cooking techniques. You will learn how to highlight the vibrant flavors of simple, seasonal ingredients to create a bountiful meal.
Begin with a hearty panzanella salad made the traditional way with stale bread and local vegetables such as tomatoes, cucumbers, spring onion and fragrant basil. Next, practice preparing homemade pici pasta from scratch paired with a tangy tomato and garlic sauce. Finish the meal with a silky panna cotta topped with a bright strawberry and mint sauce.
Guests are welcome to bring wine and beer to enjoy during the class.

She developed an affinity for food in general and expanded to include kitchen roles in restaurants and resorts. Her favored cuisines include Asian fusion, traditional Tuscan dishes, dairy-free and gluten-free dining. In the spirit of Italy’s culinary heritage, Chef Erika offers guidance to budding chefs around Siena.
