Cooking Class - Essential Mexican Smokehouse Fare

Immerse yourself in the ancient traditions of Mexican BBQ with Chef Ronald as your guide. You'll learn essential cooking techniques, including how to smoke meats.
Begin your experience by grilling corn, then topping it with cotija cheese, citrusy crema and chili. Next, Chef Ronald will guide you in smoking a brown sugar-rubbed pork tenderloin, which you'll top with fresh peach and roasted serrano salsa. While it smokes, roast garlic and herb potatoes, and for an elegant dessert, you'll drizzle grilled pineapple and vanilla ice cream with a smoky mezcal glaze.
Guests are welcome to bring wine and beer to enjoy during the class.

We flew in the night of the class and almost skipped it cause we were tired from traveling, boy are we glad we didn't. Each dish was a work of art, and the intimate setting made it feel like a private dining experience.
