Under the guidance of an esteemed local chef, you’ll learn step-by-step tips for creating a variety of specialties ranging from tacos and mole sauce to seasonal fruit and sorbet.
You’ll begin your culinary experience by preparing handmade tortillas for vegan tacos filled with zucchini blossoms, onions, portobello mushrooms and epazote or peppermint. Use porchetta and chorizo to prepare black bean stew. Work with Roma tomatoes, tomatillos and mulato dried peppers to make an authentic mole sauce. Dessert is a sweet and refreshing ending of flambéed fruit and caramelized peanuts.

What a great morning! The excursion to the market was a fun start and we were introduced to some local herbs and fruits and vegetables that aren't seen much outside of mexico. We purchased the fresh items that we needed and returned to the kitchen. Our group was 6 people and José, the chef, did an amazing job of keeping us involved and engaged. We chopped and sauteed and pureed and pounded. We even made corn tortillas from scratch. It was a fun, educational, and delicious morning (the sopa was my favorite!!). My husband and I had never taken a cooking class abroad before (or at home for that matter) but will definitely be doing so again. Thanks José!!!

Sophia and Alberto greeted us at the door of the townhouse where we had our cooking lesson, and immediately made us feel welcome. We toured the market where they had bought our produce earlier that day, and showed us all the grocery vendors and the little food stalls. Then we walked back to the townhouse and made tortillas, salsa, tacos, and guacamole. They were fantastic hosts and teachers, and we had a great time. They made us feel so at home, instead of a class the experience felt like having dinner at home with your fun friends.
