Under the expert guidance of Chef Fanny, you'll learn how to mix, shape, layer and fill a variety of puff pastries. She infuses her sessions with a love of culture and cuisine. You'll prepare pastry cream to layer into an elegant millefeuille, also known as a Napoleon. You'll also prepare caramelized Palmier cookies using laminated dough, which is similar to croissant dough but without the yeast.

The profiterole (choux pastry) class was excellent. Fanny was a skillful teacher and a lovely person. The resulting pastries were delightful and we look forward to treating our friends with our new baking techniques. We highly recommend Chef Fanny’s course!

We thoroughly enjoyed our visit with Chef Fanny today, learning to make perfect profiteroles including secret techniques, taking it to the next level. She made us feel right at home and gave us many new skills. Fanny is a fabulously talented and experienced Chef with a wonderful passion and love for her craft and she aspires to add new phrases to her vocabulary such as “doo-hinkey” lol. She never got flustered no matter how many silly questions we asked. The time we shared was top notch, very worthwhile and loads of fun.
