Step 1

Preheat the oven to 400°F. Grease and line a 9-inch square baking pan with parchment paper. Measure and prep all ingredients.

In a separate bowl, whisk together the melted butter, brown sugar, eggs, buttermilk and mashed sweet potatoes.

Add the buttermilk mixture to the flour mixture and mix with a rubber spatula until just combined.

Transfer the batter to the prepared baking pan.

Hello, Step 3 says, "In a separate bowl, whisk together the melted butter, vegetable oil, brown sugar, eggs, buttermilk and mashed sweet potatoes." However, vegetable oil isn't listed in the ingredients section. How much vegetable oil should be included in the recipe?

Hi Kendra, thank you for your question! The recipe is slightly unclear, thank you for pointing this out so that we can address it! In the recipe video at the top, the recipe doesn't include vegetable oil. However, if you want to substitute the butter for vegetable oil, use around 3/4 of the amount listed for butter. In this case, 4.5oz of oil would replace 6oz of butter. I hope that helps!

An easy and delicious recipe for Sweet Potato Cornbread. It is spiced beautifully and very tender. Great addition to any meal.
