Online Cooking Class - Pantry Paella

Chef James will show you how to make a versatile paella using common pantry items.

Spanish paella is a versatile dish that often features seafood, chicken, sausage and seasonal produce. In this live and interactive online cooking class, Chef James will walk you through making authentic paella and garlic aioli using common ingredients found in your pantry with plenty of time for questions. A detailed prep list will be sent out the day before the class.

Ingredients


Good extra virgin olive oil, ideally from Spain
Pimenton dulce or picante (sweet or hot, smoked Spanish paprika)
Bilbao Spanish chorizo sausages or any good smoked pork sausage
Onion
Tomato passata or canned crushed tomatoes
Carton of good quality store-bought chicken broth or vegetable broth
Saffron threads
Romano or green beans, or English peas
Jar of piquillo peppers
Lemon
Bomba Spanish rice from Valencia
Egg
Sunflower oil, safflower oil or vegetable oil
Salt
Garlic cloves
Lemon juice or Sherry vinegar

Kitchen Equipment


Paella pan 13 inches to 14 inches in diameter, or similar size cast iron pan
Stove with gas
Electric or induction burner
Pot for holding and heating broth
Stirring spoon
Ladle
Immersion blender, regular blender or food processor


Prep Work Details

Here are a few things you can do to be ready for our live, interactive cooking class: CLEAN & SEASON YOUR NEW PAELLA PAN -Wash your pan with soap and warm water. Dry well. -On medium-high heat add 2 tablespoons of any oil to your pan until smoking. After 2 minutes turn off the heat and allow to cool. -Wipe out oil with paper towels. Your paella pan is now ready for use. PREP INGREDIENTS -If not using a jarred sofrito cut up your onion into a medium dice. -Have your passata or canned tomatoes in a prep bowl, crushed & ready to go. -Remove half the piquillo peppers from the jar and cut into strips. Then cut across the strips into small bite-size pieces. -Wash your green beans (or whatever vegetable you are using) and break off ends and break beans in half or thirds, depending on size. -Pour the stock into a large pot along with an additional cup of water. Bring to a boil prior to the start of the class and keep warm.

My wife and I attended the Pantry Paella class and we had a wonderful time. Chef James was patient and very knowledgeable. We would not have been able to make such a delicious meal without his guidance. He taught us so much about the history of paella in addition to how to make paella. I would definitely take another cooking class with Chef James.
