In this hands-on class with Chef Charles, you'll learn how to prepare a simple and elegant four-course menu using fresh California produce and time-honored French recipes and cooking techniques.
After filling the kitchen with the aroma of stewed onions and indulging in a warm Brie appetizer, Chef Charles will teach you the secret to preparing chicken roulades with bacon and asparagus. You can also look forward to discovering the difference that premium European-style butter can make in a potato purée as well as how to prepare a classic crème brûlée.
Guests are welcome to provide wine and beer to enjoy during the class.

Had a wonderful time with Chef Charles as he taught me how to make a variety of dishes! He's a great instructor, really easy to get along with and even shared some history on the food and ingredients. His French Onion soup was hearty and surprisingly sweet! There really is no going back after you've had some of Chef Charles' fresh, hot tortillas with some of his simple yet delicious guacamole-- WOW! Don't miss his Mushroom and Spinach Risotto (apparently, voted best risotto in SF by the San Francisco Chronicle!). It's amazingly complex, with layers of flavors.
Chef Charles is culinary virtuoso with more than 30 years of professional experience under his belt. Chef Charles has held executive chef positions in many renowned fine dining restaurants and hotels in and around San Francisco. Recently, Chef Charles has been pursing his culinary passion by establishing urban gardens in low income neighborhoods, and teaching residents how to use them to enhance their health and lives overall.
