In this hands-on class with Chef Luke, you'll learn how to build plant-based dishes using both familiar and exotic ingredients as you work your way through the preparation of a contemporary four-course menu.
You will begin by working with jackfruit, which has a meaty texture and a mild, almost neutral flavor perfect for soaking up your homemade Filipino-style marinade. Then, you'll prepare a dal-inspired dish made with creamy yellow split peas simmered in warming spices, as well as a homemade, protein-rich seitan that you will bbq smoke in banana leaf.
Guests are welcome to bring wine and beer to enjoy during the class.
