In this class, Chef Rishika features recipes that pair seemingly disparate flavor profiles and textures to create emblematic classics of northern Indian cuisine.
Learn how to properly prepare papdi chaat, a traditional street food of northern India, kadai gravy, a versatile tomato-based sauce with a robust spice profile that can accompany meat, tofu or vegetables served with basmati pulao — a side dish of fluffy rice delicately perfumed with saffron and jeweled with bright green peas. Your meal ends with kheer, a slow-cooked rice pudding dessert that is both simple and nuanced.
Guests are welcome to bring wine and beer to enjoy during the class.
